Vineyards

Premium grape varieties grown in Washington state’s acclaimed Columbia Valley.
Vineyards in northern latitude, key to the regional character of our fruit.
Like France’s renowned northerly Champagne district, our grapes ripen slowly and are ideally balanced with fruit character and crisp acidity.
Plenty of sunshine, little rainfall and a good temperature mix produce grapes with superior flavor and natural fruit acids.

Winemaking
As in Champagne, only free run juice (Premier cut) is used for this wine; no pressed juice - results in extremely delicate base wine. Juice was cold settled 48 hours. After inoculation with Pise de Mousse yeast, juice was fermented in French oak barrels, and then aged sur lie for 11 months to build layers of flavor and creaminess. Only the best lots of this first-press wine were used to blend the base wine. Once the cuvee was selected and bottled, liqueur de tirage was added to start a second fermentation which lasted 20 weeks. Following aging, the lees are disgorged and a dosage is assembled to give the wine a soft middle palate and a balanced, refreshing aftertaste. Once finished, the wine is corked and allowed to age 4 months prior to release.
