Avocado Feta Fried Egg Toast

Ingredients
- 3 avocados, peeled and pitted
- 1 Tbsp lemon juice
- ½ tsp salt
- ½ tsp pepper
- 6 slices sourdough bread, toasted
- 2 (8-oz) blocks feta cheese, crumbled
- 6 large eggs
- 1 tsp pepper
- 3 Tbsp sliced fresh basil
- 1 Tbsp minced fresh chives
Directions
- Mash avocado in a bowl with a fork to desired consistency. Stir in lemon juice, salt, and pepper. Spread avocado mixture over toasted bread.
- Sprinkle about ⅓ cup crumbled feta around the perimeter of a 4-inch circle in a nonstick skillet over medium heat. When cheese begins to melt, crack 1 egg into center of cheese; sprinkle with pepper.
- Cook cheese and egg until cheese is deep golden brown and egg is cooked to desired doneness.
- Place over avocado toast and sprinkle with basil and chives.
- Repeat procedure with remaining cheese and eggs.
