Avocado Feta Fried Egg Toast

Ingredients

  • 3 avocados, peeled and pitted
  • 1 Tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices sourdough bread, toasted
  • 2 (8-oz) blocks feta cheese, crumbled
  • 6 large eggs
  • 1 tsp pepper
  • 3 Tbsp sliced fresh basil
  • 1 Tbsp minced fresh chives

Directions

  1. Mash avocado in a bowl with a fork to desired consistency. Stir in lemon juice, salt, and pepper. Spread avocado mixture over toasted bread.
  2. Sprinkle about ⅓ cup crumbled feta around the perimeter of a 4-inch circle in a nonstick skillet over medium heat. When cheese begins to melt, crack 1 egg into center of cheese; sprinkle with pepper.
  3. Cook cheese and egg until cheese is deep golden brown and egg is cooked to desired doneness.
  4. Place over avocado toast and sprinkle with basil and chives.
  5. Repeat procedure with remaining cheese and eggs.
