Overnight Bananas Foster Baked French Toast

Ingredients

  • ½ cup butter
  • 1½ cups packed brown sugar, divided
  • 2 Tbsp light corn syrup
  • ¾ tsp ground cinnamon
  • 3 bananas, sliced
  • ½ cup chopped pecans
  • 1 (17.6-oz) loaf sliced brioche bread, cubed
  • 1 cup milk
  • 6 large eggs

Directions

  1. Combine butter, 1 cup brown sugar, corn syrup, and cinnamon in a saucepan; cook over medium heat until sugar is dissolved.
  2. Pour into a lightly greased 13- x 9-inch baking dish. Top with bananas and pecans. Place bread cubes over bananas.
  3. Process milk, eggs, and ½ cup brown sugar in a blender until smooth; pour mixture over bread.
  4. Cover, and refrigerate at least 4 hours or up to 2 days.
  5. Preheat oven to 375°F.
  6. Remove casserole from refrigerator and let stand at room temperature for 30 minutes.
  7. Bake, uncovered, 35 to 40 minutes or until center is set and puffed.
  8. Let stand 10 minutes before inverting casserole onto a serving platter. Cut into squares to serve.
