Breakfast Tacos

Ingredients

  • 1 (16-oz) pkg Mexican chorizo
  • 1 cup chopped onion
  • 8 large eggs
  • 2 Tbsp butter
  • 12 fajita flour tortillas
  • 1 (10-oz) container pico de gallo
  • 4 radishes, sliced
  • ¼ cup fresh cilantro leaves

Directions

  1. Cook chorizo and onion in a large skillet over medium heat until chorizo is browned and crumbly; drain, and wipe skillet clean. Keep chorizo mixture warm.
  2. Whisk eggs in a bowl until blended.
  3. Melt butter in skillet over mediumlow heat. Add eggs, and cook without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Season with salt and pepper, if desired.
  4. Heat tortillas according to package directions.
  5. Serve eggs and chorizo in warm tortillas topped with pico de gallo, radishes, and cilantro.
