Broccoli, Spinach, and Goat Cheese Frittata

Ingredients

  • 8 slices bacon, chopped
  • 1 (12-oz) pkg broccoli florets, coarsely chopped
  • 2 cloves garlic, minced
  • 1 (10-oz) container baby spinach
  • 10 large eggs
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 (4-oz) container crumbled goat cheese
  • ¼ cup microgreens

Directions

  1. Preheat oven to 400°F.
  2. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels, reserving 2 Tbsp drippings in pan.
  3. Cook broccoli and garlic in hot drippings 5 to 6 minutes or until broccoli is crisp-tender.
  4. Gradually stir in spinach until wilted. Stir in bacon.
  5. Meanwhile, whisk together eggs and cream in a bowl until blended; season with salt and pepper, if desired. Add egg mixture to skillet; cook until eggs begin to set around edges of skillet. Sprinkle with cheeses.
  6. Transfer skillet to oven and bake 10 to 12 minutes or until center is set. Garnish with microgreens.
